2. Regardless of what batter you use, make sure it's the right consistency... on the watery to goopeyness scale, make it a little watery. Well.. I like flatter pancakes, so there.
3. Don't bother with a mixer. People like waking up to the smell of pancakes, not the sound.
4. Pan spray. Enough said.
5. Don't try to make multiple pancakes if your pan can't handle them... unless you like little bitty pancakes (which are good too, albeit a little high maintenance).
6. Watch the damn pancakes. They don't cook themselves you know.
7. When the pan gets too hot, turn the stove down and keep the pancakes cooking on an alternate (cool) burner.
8. Don't wash the pan between cakes unless it's just a mess. You can run down a pan faster if you expose the teflon to hot and cold extremes back to back.
9. Your first flip can happen when there is at least 70% bubbles on the surface. Did you turn that pan down??!
10. After the flip, your pancake is done when you see the pancake surface rise in the middle, maybe 20 - 30 seconds.
11. I know, it says 10 rules but I just wanted to add that the toppings for pancakes are endless, but I really like peanut butter and/or fruit jelly. Yum!!
